(The PhD student will be involved in a experiment were 400 pigs (100 pigs/round) are raised from 80 to 170 kg body weight for the production of high quality PDO dry cured ham.
In the experiment 4 different feeding strategies are compared, the pigs are slaughtered and the hams are processed for about 19 months. Objective and subjective evaluation of ham quality will be performed.
The experiment is aimed to evaluate the effect of different feeding strategies (ad libitum or restricted feeding) high or low dietary protein level on ham production and quality.
